*118 Degrees cuisine is based on raw food, serving nothing but the freshest gourmet living cuisine and empowering customers through healthy living. Their dishes use local organic produce whenever possible, and their menu is entirely plant-based, made from fruits vegetables, nuts, seeds and sprouted grains.

*All of the cuisine is prepared daily by hand and is free of common allergens, and are also high in enzymes, vitamins and minerals.

*The food is prepared at 118 degrees or lower using only dehydrators - no stoves or ovens - to preserve valuable nutrients.

*In keeping with Jenny Ross’ healthy living philosophy, many materials selected for the interior are environmentally friendly and sustainable as well, including; low voc paint, ceiling tiles made from recycled plastics, a design counter made from Kirei - a sorghum plant, and chairs produced with animal-free products.

Some of our partnerships in California include Backyard Bee's Honey, Mary's Chicken, Guittard Chocolate, Laura Chenel Goat Cheese, Weiser Farms and Scarborough Farms. *Chipotle’s “Food with Integrity” vision, a pledge from founder, chairman and CEO Steve Ells to change the way people think about and eat fast food, and support more family farmers and sustainable sources. *100% of Chipotle’s dairy is made with milk from cows that are not treated with the synthetic hormone rBGH and an increasing percentage of its dairy now comes from cows that are raised outdoors on pastures.

*Chipotle also plans to source more than 10 million pounds of produce from local farms during 2011. Among other items, the new Newport Peninsula Chipotle restaurants will source bell peppers, jalapeños, and romaine from Cinagro Farms in Fillmore, Calif. and herbs from Herbthyme Farms in Pico Rivera, Calif.

*In alignment with our commitment to sustainability, we have introduced our Studio garden. The Studio Garden is a working, functional custom garden designed to grow and cultivate fresh seasonal herbs, fruits and vegetables which provide our chefs with the freshest ingredients for dishes to be served in our restaurants; our mixologists to use for cocktails; our spa to utilize for treatments; our children’s programs to use for educational activities; and our guests to use as private functions and events space.

Studio also continues to utilize local farms for any produce not supplied by the garden. We also use a forager that goes to the farmers markets for our produce.

*Organic and sustainable products are used as often as possible.

*The resort’s on-site composting program yields approximately 60 pounds of compost daily which is used throughout the resort, including the garden. (All food waste from Studio is composted)
