Orange County is home to a concept unlike any in the region, Bruxie, a quick-serve eatery serving more than a dozen sweet and savory gourmet waffle sandwich offerings. Chefs, Partners and Concept Creators, Dean Simon, Kelly Mullarney and Philippe Caupain, who opened the first Bruxie location last year in Old Towne Orange, will open its second location one year later on Tuesday, November 8th on the Birch Street Promenade in Brea Downtown (215 W. Birch Street, in the location formerly occupied by Fatburger).
“Last November, we introduced a never-before-seen concept to Orange County, and the phenomenal response to Bruxie was the catalyst for our plans to expand to this second location in Brea – exactly one year later,” commented Dean Simon, Managing Partner of Bruxie. “Opening our second location on the anniversary of our first is a significant and necessary step for our brand – the Orange County community has embraced us and we truly appreciate all our loyal Bruxie fans.”
The Brea restaurant’s menu will mirror the original menu by offering Bruxie’s unique takes on authentic Belgian waffles, alongside salads, locally produced old-fashioned cane sugar sodas, real Wisconsin frozen custard, shakes, sundaes and floats. Bruxie proudly serves Peet’s Coffee & Tea products, and nothing on the menu exceeds $10.
“Our menu puts a unique twist on classic foods, everything beginning with a waffle that is crispy, light, and yeasty,” added Simon. “For breakfast, eggs and cheddar cheese are topped with Applewood smoked bacon and folded up into a waffle; and for lunch, an Angus patty with all the dressings in a waffle instead of a bun.”
The Bruxie menu features two types of Belgian waffles. First, the Brussels waffle, used to produce all Bruxie sandwiches, is not sweet in taste, and when cooked, its yeast aroma is reminiscent of freshly baked bread. The Liege waffle, is a more dense, sweet waffle, with Belgian-pearl sugar baked into it. To satisfy the sweet tooth, Bruxie offers several sweet waffles, including S'mores with toasted marshmallow, drizzled with rich Belgian chocolate.
The Bruxie menu offers the following waffles daily at both locations: Savory: Bacon, Egg & Cheddar; Prosciutto & Gruyere; Smoked Salmon & Dill Cream Cheese; Green Eggs & Ham; Roasted Mushrooms & Goat Cheese; Buttermilk Fried Chicken & Waffle; Bruxie Burger; and Cheesy Bruxie. Sweet: Seasonal Crème Brulee; Lemon Cream & Berries; S'Mores; PB & J; Nutella & Bananas; Ogura Bruxie; and Lemon Meringue Pie.
Bruxie will be open daily from 9 a.m. to 9 p.m. (until 10 p.m. Thur-Sat) in Brea Downtown (215 W. Birch Street – beginning November 8th), and is open daily from 9 a.m. to 9 p.m. (until 10 p.m. Thur-Sat) in Old Towne Orange (292 N. Glassell Street at Palm Avenue).
