The Federal Long Beach is thrilled to announce the arrival their new Head Chef, Tia Baker. While still new at The Federal, Tia Baker has already began to enhance The Federal dining experience with monthly “Flights Around the World,” named for pairing food and flights of alcoholic beverages from different countries - first up will be the Flight to Ireland in March.
She is also revamping the everyday menus, Chef Tia is excited to create what she calls “Retro California Fusion Cuisine,” which will pair perfectly with The Federal’s fine casual ethos. In upcoming months, The Federal Long Beach will pay homage to their 1920’s Renaissance Revival building by hosting a weekly Burlesque Brunch in the Underground.
It’s likely to be a perfect marriage between the chef and The Federal as she says, “Working at The Federal offers me the freedom to create the type of cuisine that I not only grew up with, but also helps me utilize what I have been able to learn and develop over the years of my culinary experience. The Federal takes a step into the past, with a leap into the future. And that is what I feel my style of cooking represents. Something from the soul, but with a glimpse of what’s to come.“These plans for approachable opulence come from an Orange County native who began her career as a pastry chef at the prestigious Montage Resort, but who quickly realized that running an entire kitchen would be far more fun. Working her way from Line Cook to Executive Chef of The Clubhouse, Chef Tia eventually found herself as the Recipe and Development Training Chef with renowned Southern California chain The Cheesecake Factory.
Her passion and skills with fusion cuisine have taken her to head positions all over Southern California and eventually to The Federal. As Chef Tia explains, “The Federal Long Beach has the ability to connect with a variety of diverse guests. We have the capability to house buy-outs, weddings, and private events, while still providing our wonderful food to our local guests. It is a comprehensive, creative experience!”
Opened in Spring 2013, The Federal has established itself as one of Long Beach’s leading restaurants and an anchor for the lively downtown Pine Avenue entertainment district.
