Soon ‘lette will open its first Orange County macarons boutique at Fashion Island in late spring. Not to be confused with its American macaroons, traditional French macarons are double-sided almond meringue cookies filled with white chocolate ganache.
Unable to find authentic macarons of her native France here in Southern California, Paulette Koumetz, co-founder of ‘lette, set out to make her own. With the expertise of world renowned French pastry chef, Christopher Michalak, winner of the 2005 Coupe du Monde de la Patisserie, together they developed the recipe for this Parisian specialty.
Handmade daily at their central kitchen in Beverly Hills, ‘lette offers 14 classic flavors, as well as seasonal flavors throughout the year. The store will display a rainbow of macarons in flavors such as classic Caribbean Chocolate and Raspberry, as well as the more exotic Earl Grey, Salted Caramel, Passion Fruit, and one of their most popular flavors, Sweet Wedding Almond. ‘lette macarons are perfect for gifts and parties, from their five-tiered tower of macarons to their mini-boxes featuring their signature logo as a cut-out.
Established in 2007 by Koumetz and Roni Kan, ‘lette opened its first boutique in Beverly Hills, which was recognized with the city’s Architectural Design Award. The ultra modern and sleek ambiance, featuring white walls and soaring ceilings, can be seen at ‘lette in Pasadena, Hancock Park, and soon, Fashion Island in Newport Beach. ‘lette will be located near Nordstrom in the coastal shopping center.
“We are very excited about coming to Fashion Island,” said Koumetz. “Fashion Island was selected as the first ’lette boutique outside of Los Angeles as a direct response to the requests by many customers who have been traveling to our current stores from Orange County and even San Diego. Newport Beach is also representative of all of the things we love about Southern California – the beach, the sun and friendly people. And I can’t think of a better place than Fashion Island with its great assortment of boutiques and restaurants.”
