Wine and food lovers can start enjoying their holiday season this year at Montage Laguna Beach by attending one or both of two Napa Valley wine-focused dinners. Chef Ben Martinek will collaborate with Far Niente Winery on Saturday, November 3; and five Montage chefs will feature dishes showcasing Joseph Phelps Winery selections on Friday, December 7. Both wine-paired dinners will start with hors d’oeuvres followed by a five-course tasting menu. Bruce Mooers from Far Niente and Lynn Phelps Finch from Joseph Phelps will host their respective dinners.
Far Niente Winery Dinner in Studio’s Private Dining Room
Saturday, November 3, starting at 6 p.m.
Far Niente Winery in Oakville has focused on award-winning, sustainably-produced cabernet sauvignon and chardonnay since 1982. Bruce Mooers , VP of sales, will represent Far Niente, and its family of wines including Nickel & Nickel, Dolce, En Route and Bella Union. Studio’s Chef Ben Martinek’s Far Niente Winery Dinner will begin with hors d’oeuvres on Studio’s Lawn, including Kona Kampachi Tartare and Lobster Fritters paired with Far Niente Chardonnay, Napa Valley 2017. In Studio’s Private Dining Room, the first course will be Cured Baja Striped Bass with a mature Far Niente Chardonnay, Napa Valley 2011. Next, Seared La Belle Farms Duck Breast with braised endive, pancetta and roasted black grapes is paired with En Route Pinot Noir, Les Pommieres, Russian River Valley 2015. Grilled Dry Aged Strip Steak accompanied by smoked trumpet mushrooms complemented by Nickel & Nickel Cabernet Sauvignon, Quicksilver Vineyard, Rutherford, Napa Valley 2012 will come next. The fourth course is Thai Long Pepper-Spiced Venison Loin with wild rice, celery root puree and huckleberry puree along with Far Niente Cabernet Sauvignon, Napa Valley 2016. This extravagantly delicious meal will conclude with Rogue River Blue Cheese and charred blackberries served with Dolce, Napa Valley 2007.

Joseph Phelps Vineyard on Montage Laguna Beach’s Pacific Lawn
Friday, December 7, starting at 6 p.m.
Joseph Phelps Vineyard, since 1973 and located along the western Sonoma Coast, is known for its 100% estate-grown, sustainably produced wines. Lynn Phelps Finch from Joseph Phelps will host the wine dinner. This unique, special event will feature the talented chefs of Montage. The evening will begin with passed hors d’oeuvres of Foie Gras Torchon on Brioche Crostini with Huckleberry Compote, Kampachi Crudo with Yuzu Cucumber Pearls, Icicle Radish and Masago, Petite Beef Wellington with Green Peppercorn Sauce and Grilled Lobster Tacos with Salsa Verde with Joseph Phelps Sauvignon Blanc, Napa Valley 2017 being poured. To begin the dinner, Montage Laguna Beach Executive Chef Jeff Walter’s course is Seared Diver Scallop with red quinoa salad, citrus-fennel relish and basil oil served with Chardonnay, Freestone Vineyard, Sonoma Coast 2016 followed by Butternut Squash Soup with toasted pepitas and dried cranberries presented by Mosaic Bar and Grille Chef Miguel Ruiz and served with Pinot Noir, Freestone Vineyard, Sonoma Coast 2016. Next Studio Chef Ben Martinek’s featured dish is Grilled Dry-Aged Strip Steak accompanied by salt-roasted celeriac, maitake mushroom, braised pine nuts and bone marrow bordelaise paired with Cabernet Sauvignon, Napa Valley 2015 and Cabernet Sauvignon, Insignia, Napa Valley 2015. Executive Sous Chef Prabeen Prathapan will feature his Alpine Blossom with Austrian cow’s milk cheese, fig and marcona almond torta and local honey, and Delice du Semillon, Napa Valley 2017 accompanies. Executive Pastry Chef Lee Smith will create Williams Pears with lemon verbena and chia seeds to complete this elegant dinner.
