Joachim Splichal, Chef and Founder of Patina Restaurant Group, names Alfonso Ramirez Executive Chef of Pinot Provence. A long standing alumnus from within Spichal’s culinary portfolio, Ramirez brings extensive experience in fine-dining establishments from his work at the company’s flagship Patina Restaurant to in the Costa Mesa dining destination of Pinot Provence.
“It is with a great sense of pride that I welcome Chef Ramirez back to the Patina Restaurant Group family,” say Splichal. “Watching him grow from his first job as a line cook at Patina Restaurant to now the head of one of our Orange County restaurants epitomizes the backbone philosophy of mentorship that we foster within the company.” Adding to his tenure within the culinary organization, the self-taught Ramirez began his training under the tutelage of his father, a respected French chef, and continued with stints under Lee Hefter at Spago, Eric Greenspan at Meson G and The Foundry, and most recently as the Chef de Cuisine at Enoteca Drago in Los Angeles.
Working together with his mentor Splichal, Ramirez is set to revitalize Pinot Provence with a modern twist on traditional French provincial cuisine. Classic as well as contemporary dishes including Canard Cassoulet with duck confit and housemade Charcuterie including duck prosciutto, chicken terrine, fried rillette, potted pork, grilled bread, smoked butter, and guanciale are sure to transport patrons to the root of culinary expression.
