Antonello Ristorante, which not too long ago underwent an extensive interior remodel and revamp of its menu of critically acclaimed Italian fare, is introducing Southern California’s biggest steak – a 50 oz. cut of USDA organic Choice beef, announced chef/owner Antonio Cagnolo. Referred to by Italians as "doca" and Americans as skirt steak, the cut is long, flat and prized for its flavor. Antonello will present it rolled and prepared to guests’ desired temperature along with a selection of sauces to further enhance the beef’s natural flavor. Cost is $79.95 and is meant to be shared.
“Steak has always been central to Italian cuisine and Antonello has long offered various traditional cuts like filet mignon, New York strip and ribeye,” said Cagnolo, whose father, Antonio Sr., was the town's butcher. “Our newest offering – the Non Plus Ultra – is a stellar cut of skirt steak and we prepare it so that it’s juicy and tender. The presentation is unique in that we roll the beef and then slice it against the grain and so the spiral effect remains intact.”
Cagnolo said that it is meant to be shared with leftovers aplenty though there are some meat eaters whom he believes will attempt to consume the entire steak.
"Proper Italian cuisine is characterized by its simplicity, with many dishes having only four to eight ingredients," said Cagnolo. “Our traditional way of cooking relies mainly on the quality of products we use rather than any overindulgent tendencies by our culinary team. That’s why we’re highly selective of the cuts of meat we choose and the purveyors who supply them.”
Highly rated in the Zagat Guide for several years, Antonello Ristorante has earned a sterling reputation for having served local residents as well as luminaries the world over including presidents, foreign dignitaries, entertainers and business leaders. Co-Chefs Gino Buonanoce and Salvatore Ferrara work closely with Cagnolo to develop daily specials and special prix fixe menus many paired with wines and other spirits.
