As temperatures begin to rise and the days get longer with the arrival of spring, RUSTICA California Wine Bistro Executive Chef Renieri Caceres introduces a new lunch and dinner menu featuring an abundance of fresh, flavorful seasonal vegetables.
Among the many new dishes its new menus, the Fashion Island bistro will showcase spring vegetable ragout, homemade English pea ravioli, morel cream, artichoke barigoule, Weiser Farm carrots, char-grilled asparagus, stuffed squash blossoms, fresh chanterelle mushrooms and shaved raw asparagus, among its many dishes.
“This is a great time of year to really showcase the season’s offerings and get creative with dishes. My spring menu uses the freshest vegetables to ensure that we are serving the best tasting, most flavorful dishes,” commented Chef Ren, who revealed that all menu items at RUSTICA focuses on contemporary regional cuisine created with a commitment to quality, handcrafted ingredients and products. “I like knowing where my produce and meats come from – just try my carrots from the unique family-run Weiser Farms, my free-range chicken from Mary’s and my seasonal veggies from Kenter Farms.”
