Chef Glen Tinsley Brings His Italian Training And Knowledge To Brunos Italian Kitchen

Brunos Italian Kitchen recently appointed Chef Glen Tinsley as Chef de Cuisine and he’s added several new seasonal dishes to the menu. Tinsley is an Orange County native started his culinary career in San Francisco by attending the California Culinary Academy, followed by working at various restaurants in the Bay Area, including The Flytrap Restaurant, Napa Valley Grill and Ottimista.

Before returning to his roots in Orange County, Tinsley worked in Tuscany, Italy at an Agriturismo named Antica Fattoria La Parrina for two years. It was here that Glen learned hands-on, ingredient-driven cooking styles through cheese making, olive oil production, salumi preparation and wine making and truly embracing the farm-to-fork culture. From there he ventured back to Southern California, where he was served as the Chef de Cuisine at Joe's Restaurant in Venice Beach when they received a highly-acclaimed Michelin star. Most recently he landed at Brunos Italian Kitchen under the leadership and direction of Executive Chef and Owner Peter Serantoni.

Chef De Cuisine Glen Tinsley’s menu highlights his creativity and talent in the kitchen with dishes such as:

Braciola di Maiale - Duroc pork chop served with roasted yukon gold potatoes, braised kale and elephant garlic

Pollo al Mattone - Free range chicken breast served with green beans, creamy polenta and rosemary jus

Crudo di Tonno - Ahi tuna served with marinated fennel, seasonal citrus, aperol vinaigrette and sea salt

Bucatini di Cinghiale - Wild boar sausage, pancetta, tomato, radicchio trevisano and red wine

In addition to the new dinner menu items, there's also a fresh take on the cocktail menu, featuring the following new libations:

Liz's Summer Solstice - Fresh watermelon, vodka, mint campari and prosecco

Dee's Matrimonio - El Jimador Blanco, aperol cantaloupe and grapefruit juice


Brunos Italian Kitchen, named after Owner and Chef Peter Serantoni's mentor and father, Papa Bruno, brings to Brea the meals prepared in their home, located in the heart of Venice, at San Marco 865. The breakfast conversation was about that day's lunch, and at lunch they would discuss that evening's dinner. Peter's grandmother, Nonna Maria, shopped twice a day at the local market, where what was fresh and seasonal guided what would be served at the family dinner table. It was there, at San Marco 865, that Peter learned the simple and rustic cooking styles taught by Papa Bruno and Nonna Maria. Peter has translated these fond childhood memories into a menu with many of Nonna Maria's beloved dishes alongside many of your favorite Italian foods.
