Rory Sandoval Joins STONEHILL TAVERN as Executive Chef

Michael Mina is pleased to announce Rory Sandoval as executive chef of the Forbes Four-Star Stonehill Tavern at The St. Regis Monarch Beach.  Sandoval brings nearly a decade of experience, where he will provide creative input, execute a menu designed by Mina and oversee daily operations.

Sandoval comes to Stonehill Tavern from Lolo Restaurant in Portland, where he was the chef at this popular venue that focuses on the foods of Northern Spain.  Prior to that he served as sous chef at Lolo’s sister restaurant in Portland, Giorgio’s, where he concentrated on the cuisine of Northern Italy with French and Pacific Northwest influences.  Sandoval has also worked in casual settings including Montana Ale Works in Bozeman, Mont. as well as luxury, fine dining establishments such as the iconic Michelin-starred Restaurant at Auberge du Soleil in the Napa Valley.

Offering tavern fare in a casual yet sophisticated setting, with many of the menu items designed to be shared, Mina presents his acclaimed approach to home-style favorites and recently unveiled additions.  A highlight of the menu is a “Snacks & Finger Foods” section with Classic Cheese Fondue ($16), Local Fish and Chips ($9), Lobster Fritters ($15) and BBQ Pulled Pork Sliders ($8).  For guests wanting to experience the best of the local, seasonal and sustainably grown ingredients, there is a “Farmers’ Market Menu,” featuring a prix-fixe, six-course offering for $75.  The children’s menu at Stonehill Tavern has been transformed with items designed to appeal to a younger palate such as White Cheddar Grilled Cheese ($9) and Warm Homemade Pretzels ($7).    

 

Inspired by the ocean locale, the menu offers a chilled shellfish section, as well as fresh appetizers such as the “OC” Salad ($19) with mixed greens, Maine lobster, avocado and citrus vinaigrette; and a Sashimi Trio ($19) with pickled ginger, fresh wasabi and ponzu.  Mina also offers his signature Maine Lobster Pot Pie ($MP) with seasonal vegetables and brandied lobster cream.  The menu includes prime steaks ranging from $39 - $65 as well, each of which includes Yukon gold whipped potatoes, creamed spinach and wild mushroom marsala jus, served presentation style rather than as a part of formal table service – a style that characterizes the overall dining experience at Stonehill Tavern.
