Fashion Island Hotel is known for food, wine and cocktails. This spring’s line-up of culinary experiences includes gourmet wine dinners created by Oak Grill’s Chef Brittany Valles in collaboration with Daou Vineyards & Winery in April and with Rombauer Vineyards in May. The first weekend in May brings a Derby Day Watch Party and a Cinco de Mayo Unlimited Taco Bar.

Daou Wine Dinner at Oak Grill
Wednesday, April 24, cocktails start at 6 p.m. followed by dinner at 7 p.m.
At Oak Grill, Chef Brittany Valles’ will serve a special four-course menu she has created to pair with world-class wines produced at family-owned Daou Vineyards & Winery from the California Central Coast terroir of Paso Robles. A representative from Daou will attend the dinner to interact with guests. Hors d’oeuvres at the cocktail reception will be Mini Beef Wellingtons and Truffle-Mushroom Arancini. The first course of Faroe Island Salmon with jerk spice, plantains, Meyer lemon aioli and pickled apricots is paired with Daou Sauvignon Blanc. Then Little Gem Salad with strawberries, goat cheese, basil vinaigrette, saba and crispy onion will be paired with Daou Chardonnay, and next the vineyard’s famous cabernet sauvignon will accompany Duo of Lamb with sunflower seed risotto, artichokes, roasted tomatoes and feta and lamb jus. The fourth course is a dessert of Gianduja Crémeux with blackberry citrus coulis and candied hazelnuts to be served with Daou’s extravagant Soul of a Lion, which is rich, round and full-bodied.

Oak Grill Fireside Derby Day Watch Party
Saturday, May 4, from 2 to 5 p.m.
Guests can celebrate Derby Day in their most dapper apparel, while enjoying finger foods, including pretzels with beer cheese and mustard, Kentucky Hot Brown Sliders and fries and Kentucky nachos. Woodford Reserve Mint Juleps will be served in take-home commemorative glassware and, of course, there are the thrills of watching Derby Day on the TVs at Fireside.

Celebrating Cinco de Mayo at Aqua Lounge
Sunday, May 5, from 11 a.m. to 4 p.m.
Everyone loves festive Cinco de Mayo and this year’s festivities are on a Sunday. At the Unlimited Taco Bar on the deck will be sides, chips, guacamole and more! Live music adds to the fun, and the mixology team will be concocting Herradura Suprema Tequila in a mega margarita glass for $50, or Milagro Tequila House margaritas will be $5.

Four-Course Rombauer Wine Dinner at Oak Grill
Thursday, May 23, cocktails start at 6 p.m. followed by dinner at 7 p.m.
Oak Grill’s Chef Brittany Valles and her culinary team are hosting a four-course dinner accompanied by critically acclaimed wines from St. Helena-based Rombauer Vineyards. A representative from Rombauer will attend the dinner to interact with guests. This special evening starts with a cocktail hour where guests will savor Uni Toast and Caprese Skewers. The first course is a Spring Vegetable Salad with pistachio-crusted goat cheese, black garlic tofu, lemon vinaigrette and onion soil served with Rombauer’s prized chardonnay. Next comes Chia Seed-Crusted Sea Bass with roasted fumet-marsala sauce, wild spring mushrooms and asparagus paired with Rombauer Merlot. Diamond Cabernet will be poured with Coffee BBQ Beef Cheeks served with sweet potato purée, fermented cherries, onion rings, arugula and beef jus. The dessert course is Citrus-Spiced Crème Catalana with blackberry compote and salted caramel complemented by Rombauer Zinfandel.

Every day from 4 to 7 p.m., Happy Hour at Aqua Lounge and Oak Grill Fireside offers a special menu of $7 bites and shareables that pair perfectly with craft draft beers at $7, wines by the glass at $7 and well cocktails at $7. New bites include Popcorn Shrimp; Housemade Chips with guacamole and salsa; Classic Iceberg Wedge Salad with bacon, sun-dried tomatoes, fried onions, candied walnuts and blue cheese dressing; and Tuna Poke with wasabi aioli, shaved radishes, avocado and wakame.

Supper Sundays: Family-Style Italian at Oak Grill
Every Sunday through May
Families and their friends will love heading to Oak Grill for Supper Sundays designed for old-fashioned bonding and enjoyment while dining on Italian favorite comfort foods. From March through May, the Italian-centric family-style dishes are created to be shared. It’s a fun dining experience that starts with Garlic Knots with marinara and parmesan FOR THE TABLE. Next comes the ANTIPASTI with choices including Antipasti Salad, Minestrone Soup, Calamari Fritto Misto, Fried Mozzarella and other selections. PRIMI options are Spaghetti & Meatballs, Shrimp Scampi, Chicken or Eggplant Parmesan, Baked Ziti and more. And for dessert, DOLCI offers Ricotta Cheese Cannolis or Tiramisu.

Oak Grill’s Executive Chef Brittany Valles favors flavors that are bright, bold and fresh. On Wednesdays and Thursdays each week, she’s created a select three-course menu with choices that showcase her version of dishes she thinks food lovers will especially savor. The menu changes monthly.
